Lettuce Wraps and Hoisin Brussel Sprouts

We were so hungry last night. Lettuce wraps were on the menu but it just didn’t seem like enough. Mmmmmm tofu lettuce wraps, unfried rice, and hoisin brussel sprouts. How is that for emptying out the fridge?

The stuffing for the lettuce wraps consisted of cubed tofu (baked in the oven at 350 degrees for 40 minutes). Then tossed in some garlic, ginger, soy sauce, red pepper flakes, and chopped water chestnuts.

Sprinkle with green onions and eat on a piece of lettuce.

The brussel sprouts were halved and roasted at 425 degrees for 15 minutes. Then I tossed them in a sauce (soy sauce, tablespoon of brown sugar, red pepper flakes, ginger and garlic). Roasted for another 5-10 minutes.

And then just a simple unfried rice. Peas, chopped carrots, more garlic and ginger (scrabbled egg or tofu) with brown rice, topped with more green onion.

Again, much better than takeout! And I had leftovers for lunch!
