Our one year anniversary of becoming a mostly vegetarian family is coming up. We have tried several versions of meatless loafs in the last year. I am still on the quest for a really good “meat”loaf sandwich. When we still ate meat, I would make a turkey meatloaf just for the sandwiches. I have given up and frankly don’t want to try meat “replacements” anymore. I really don’t care about that “meat” texture anymore. But I would love a good sandwich made of leftovers. This is the latest loaf creation that I found on the Whole Foods website (http://www.wholefoodsmarket.com/recipes/2672).
And yes, those are sliced potatoes, mushrooms and green beans. More importantly, the loaf…..it makes a great sandwich with dijon mustard the next day!
