It is hard to plan meals a week in advance. It is really hard when you are planning meals for a 5 and 2 year old. The mostly vegetarian husband is not much help. So imagine my surprise and excitement when he not only offered suggestions, but cooked one night as well! He made tofu pad Thai Wednesday night. It is always a winner in our house. I think he likes to make it because he doesn’t feel bad about stealing the leftovers for his lunch the next day. But, he did make another suggestion; cob salad. Hmmm…think he would miss the bacon? Let’s see……
I followed Robin Robertson’s recipe for Smokey tempeh bits in her book; ‘Vegan on the Cheap’. Pick up this book! It’s fantastic!
I piled our plates high with fresh spinach, cooled smokey tempeh bits, chickpeas, chopped hardboiled eggs, sliced avocado, and drizzled some Marzetti’s organic blue cheese dressing over the top.
I believe that a beautiful summer red tomato would have made this dish taste even better. I will have to remember that in July. The mostly vegetarian husband had two helpings! He was so busy eating that he never had the chance to complain about the lack of bacon. Or did he even notice?
